I have been eating low carb for a number of years and always had a desire to have a plate full of runny eggs and plenty of toast to dunk.
In all honesty there is no such thing as moderation when it comes to grain products. You just say good-bye. And you then tell yourself, "I don't miss it."
Because we have an alternative. Sweet potato fried eggs.
With the vegetable spiralizer being all the rage, I decided to to use my 50 cent vegetable peeler. I like to have thin strips of carrots in my salads, but the day I tried it on sweet potatoes, I knew I was on to a more creative way of cooking.
The best way to get more healthy foods into your diet it to be as creative as you can imagine.
These thin strips of sweet potato soak up the egg yolks just fine and taste great.
Once you sautee them in butter for a few minuted, you crack your eggs right on top.
I tossed in some almonds for a little crunch and breakfast is served.
Take a look at the photos. There is just one problem. It's not as pretty once I flip the eggs, but you "get the picture."
